A passage from the book… Although there are several excellent scientific works dealing in a detailed manner with the cacao bean and its products from the various view points of the technician, there is no comprehensive modern work written for the general reader. Until that appears, I offer this little book, which attempts to cover lightly but accurately the whole ground, including the history of cacao, its cultivation and manufacture. This is a small book in which to treat of so large a subject, and to avoid prolixity I have had to generalise. This is a dangerous practice, for what is gained in brevity is too often lost in accuracy: brevity may be always the soul of wit, it is rarely the body of truth. The expert will find that I have considered him in that I have given attention to recent developments, and if I have talked of the methods peculiar to one place as though they applied to the whole world, I ask him to consider me by supplying the inevitable variations and exceptions himself. The book, though short, has taken me a long time to write, having been written in the brief breathing spaces of a busy life, and it would never have been completed but for the encouragement I received from Messrs. Cadbury Bros., Ltd., who aided me in every possible way. I am particularly indebted to the present Lord Mayor of Birmingham, Mr. W.A. Cadbury, for advice and criticism, and to Mr. Walter Barrow for reading the proofs. The members of the staff to whom I am indebted are Mr. W. Pickard, Mr. E.J. Organ, Mr. T.B. Rogers; also Mr. A. Does “extra rich milk chocolate” mean there’s more milk or more chocolate?

Question by Lloyd: Does “extra rich milk chocolate” mean there’s more milk or more chocolate?
I just don’t get it. If there’s more chocolate, then it would be more like a dark chocolate, but milk chocolate lovers usually don’t like dark chocolate. But, if it’s more milk, then wouldn’t that weaken the overall flavour, making it less rich?

This one’s really confusing.

In the parlance of the marketing types, generally, “extra rich” means that it has more fat. But in the case of chocolate milk, for instance, they may have added an ingredient called “maltodextrin” or any one of a number of “gums” which are just fiber compounds that make the mouth feel seem richer.

In accordance with dietician Silke Restemeyer, who is working for a Germany-based nutrition association, chocolate can indeed uplift the spirits. She says that chocolates contain plenty of fat and tryptophan. These substances make sure that higher amounts of the neurotransmitter serotonin are created in your brain, thus giving us happy feelings.

Many people link chocolate consumption to positive memories of childhood. The sensation that you get from chocolate as it melts in the mouth gives a warm feeling, which may actually give you temporary distraction from all the apprehensions of daily life.

Nevertheless, this little pleasure typically lasts only for a little while. “After all, you can’t eat that much chocolate for it to have a sustained beneficial effect – and nor should you,” Restemeyer said, pointing out the high calorie and fat content of typical chocolate.

A tiny amount of chocolate every day will help you deal with stressful moments. However you should stay away from other sweet treats or snacks. Snack alternatives like dried fruit or fruit and nut combinations will provide you with sufficient energy that you need to help you keep stress at work or the stress of personal relationships in check.

At certain moments that you need chocolate, keenly observe yourself. When you’re always craving chocolate, you must take particular measures to curb it. Some measures include basic things such as drinking a relaxing cup of warm tea, taking a brief walk, and practicing relaxation techniques, just to name a few. Do any of these thing, and you are sure to dispel the blues.

“It would of course be preferable to avoid the stressful situations where possible, or to learn to cope better with them internally,” Restemeyer says. That way, you eat chocolate while enjoying a quiet moment, rather than considering it as an antidote to stress. That, I believe, is the true essence of chocolate!

Carob, Bulgar Wheat Question?

1) Has anyone ever tasted “Carob”… I heard it’s supposed to be a substitution for chocolate… Does it taste like chocolate?

2) Has anyone ever tried “bulgar wheat” and did you like it? If so how was it prepared?

Carob can be substituted for chocolate and yes it tastes similar to chocolate yet can be a bit grainy.
I’ve had Bulgar wheat in several dishes from bread to a salad filler, not to be confused with Cracked Wheat which is used in dishes that have longer cooking times.
