Is it ok to leave chocolate covered strawberries at room temp or fridge over night?? And throughout most of the day??  (for example, make strawberries Friday night, eat Saturday night)

Have a look at how well a bar of chocolate stands up at room temp.
Ideally store in the fridge.

Yes, keep them in the fridge.They are only good for a couple of days, so be sure to eat them up.

Yes. Put them on a cookie sheet and cover them with saran wrap.Refrigerate them and they will be fine.
