Chocolate and Curry
Here’s an interesting story coming from an Indian restaurant called the Nakodar Grill in Glasgow. They are launching a new dish called the Nakodari which is a medium hot king prawn curry that comes complete with a chocolate and strawberry naan bread.
In a trend that is gaining momentum, chocolate is being combined with more and different flavors helping to bring out amazing flavor character. In this dish the chocolate is combined with ground coriander seeds, garlic, chili, ginger, and other spices.

Chocolate Cheerios
You asked for it, you got it. General Mills is beginning to ship Chocolate Cheerios to a grocer near you! You should see it on shelves soon.

Baked Chocolate Doughnuts
It’s January, the time of the year when everyone seems to be concerned about reducing that holiday weight gain. There’s no reason to give up on your chocolate fix though.

Chocolate Sales Strong in 2009

Fling Chocolate Bar
Have you had a chance to try the new Fling bar from Mars? Apparently it’s their first new brand in 20 years.
These new chocolate bars have a truffle filling on top of a crisp layer and all that is covered in more chocolate. Yet there are only 85 calories per bar.

Dutch Processed
Sometimes people ask me “What is Dutch Process Chocolate?” Basically, this is chocolate that has been treated with an alkali. The process results in enhanced color, lower acidity, better solubility, and less flavor.
Back in the 1820’s a Dutch chemist by the name of Van Houten developed the process by which one can darken chocolate as well as reduce its bitterness. Unfortunately this process also reduces the chocolate flavor.
Even so there is a perceived benefit to the consumer. The darker chocolate color is generally thought of as being of higher quality. (It’s best to read a label because “dark chocolate” is not Dutched, rather dutched chocolate is darker than its non-Dutched counterpart.)
The darkest, chemically altered cocoa is called black cocoa. And, it’s the ingredient in the top and bottom parts of Oreo cookies.
While we might like the look of the darker chocolate, the Dutch process greatly reduces the antioxidant benefits of chocolate. So if you are looking for healthy chocolates avoid Dutch process.

Chocolate – It’s Good For You!
Oh, chocolate! Milk Chocolate, dark chocolate, chocolate truffles. Or chocolate donuts, candy, or cereal. Chocolate drinks and chocolate ice cream. It’s all so good, and it’s everywhere. You’d be hard pressed to go through a day and not see something boasting the flavor of chocolate. It might be in your home, at your office, certainly at the grocery store, and often on TV commercials. And, yet, even though it’s everywhere, some people avoid chocolate all together. What are they thinking?
Yep, some people think chocolate is bad for them. The facts don’t support this thought though. There is a lot of supporting research to suggest that chocolate is actually quite good for your health. For one thing it’s loaded with antioxidants. Sure you might want to watch out for the extra fat and sugar that often comes with this deliciousness. That can be a concern. But overall, chocolate can be part of a rather well-balanced, healthful diet.
Just remember, everything in moderation!
