Every time I make chocolate chips, I mess them up. They either end up crunchy and burnt, or not cooked all the way. I’ve tried adjusting the heat and the time that they stay in the oven, but nothing helps. I don’t know if it’s the recipe or if it’s just me.

Ultimate Chocolate Chip Cookies
Preparation time: 30 to 35 minutes
Baking time: 8 to 13 minutes/baking sheet
About 3 dozen cookies
1-1/4 cups firmly packed light brown sugar
3/4 cup Butter Flavor CRISCO all-vegetable shortening or 3/4 Butter Flavor Crisco stick
2 tablespoons milk
1 tablespoon vanilla extract
1 egg
1-3/4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
1 cup (6-ounce package) semi-sweet chocolate chips
1 cup pecan pieces (optional)*
Heat oven to 375ºF. Combine brown sugar, Butter Flavor Crisco Shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat egg into creamed mixture.
Combine flour, salt and baking soda. Mix into creamed mixture until just blended. Stir in chocolate chips and nuts, if used.
Drop rounded measuring tablespoonfuls of dough 3 inches apart onto ungreased baking sheet.
Bake one baking sheet at a time at 375ºF for 8 to 10 minutes for chewy cookies (they will look light and moist), or 11 to 13 minutes for crisp cookies. DO NOT OVERBAKE. Cool 2 minutes on baking sheet on a cooling rack; remove cookies to rack to cool completely.
* If nuts are omitted, add an additional 1/2 cup semi-sweet chocolate chips.

Baking unlike other cooking is more of a science & not very forgiving. Use good fresh ingredients.

The original Toll House recipe never fails. All ovens are different.Baking for one minute more or one less, than directed, usually results in perfection.
BASIC COOKIE RECIPE
1 lb. butter (room temp.)
2 c. white sugar
1 c. brown sugar
4 tsp. vanilla
Beat above ingredients together.
Sift together: 2 tsp. baking soda 6 c. flour
Gradually, mix dry ingredients with above mixture until well mixed.
CHOCOLATE CHIP COOKIES:
1 (12 oz.) pkg. chocolate chips
Nuts if desired
Drop on cookie sheet by spoonfuls. Bake at 350 degrees until brown around edges.
Give this recipe a try. No matter what…DO NOT cook them any longer than the recipe says, even if you think they don’t look done, follow this recipe and your cookies will be perfect.
SOFT-CHEWY CHOCOLATE CHIP COOKIES
1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
2 1/2 c. oatmeal (powdered in blender)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
2 c. flour
1 pkg. chocolate chips (semi-sweet)
1 1/2 c. nuts (optional)
Preheat oven to 400 degrees. Cream butter and sugars. Blend in eggs; add oatmeal. Mix dry ingredients. Mix will be very stiff. Mix in chips and nuts. Put 2 inches apart on ungreased cookie sheet. Bake 9 minutes – no more!
I agree that the Tollhouse recipe is truly the best. But my guess, from the degree of your problems, it’s likely your oven, heat, and/or baking time.
Make sure to set the rack in the middle of the oven. And make sure to KEEP AN EYE on the cookies. When they are no longer puffy in the middle, take them out. If you are not sure, try lifting one slightly with a spatula to check the bottom. They should be golden brown, not black. Also, using a non-stick cookie sheet helps. And use consistant spoonfuls when dropping your batter on the cookie sheet and make sure they have enough space between them to actually cook through. And make sure to ALWAYS use fresh ingredients. Check the expiration date on your baking soda. That is frequently a likely culprit to screw up an otherwise good batch of cookies.
I think you just need to keep an eye on them, mostly. Cookies are not something you can pop in the oven then run off and do something else. They don’t take long to bake. So you do need to watch them closely.
Try this recipe: 1 cup sugar 2/3 cup brown sugar 1 cup soft margarine 1 cup peanut butter 2 eggs 2 cups flour 1 cup oatmeal 2 teaspoon baking soda 1/2 teaspoon salt 2 12 oz. packages chocolate chips 1 teaspoon vanilla. Mix all above, drop by teaspoon on cookie sheet. Bake 10-12 minutes in 350* oven.
If making bars, Grease Bottom of pan ONLY, bake 25-30 minutes.
I have the same problem but here is a recipe that was given to me and is suppose to be mistake proof. I haven’t tried it myself yet but I am going to very shortly. The rating was 99.9% would make this cookie again. and I think that is great
Mom’s chocolate Chip Cookies
1 c. butter, 1 tsp. Vanilla,3/4 c. brown sugar, 2 1/4 c flour
1/4 c white sugar,1 tsp. Baking soda,1 pkg. Instant vanilla
pudding mix, 2 c. semi sweet chocolate chips
Heat oven to 375^. In mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Gold in chocolate chips. Drop by teaspoon onto ungreased baking sheet. Bake for 10 to 12 minutes or until lightly browned.
