I want to make raw white ,dark and milk chocolate at home i want to know the substitute of cocoa butter and the quantity for one cup of coco powder and one cup of sugar in white chocolate .

If you don’t have access to cocoa butter, and assuming you aren’t selling it, you can substitute butter or palm oil along with a 40% mix of bee’s wax to harden it up. Basically any saturated fat will work.
If you’re making it for sale though, most countries require you to use a minimum amount of cocoa butter in order to legally call it “chocolate.”

Bittersweet is not as sweet as semi sweet so the cake will have a more adult appeal, otherwise there is no reason you couldn’t use the bittersweet chips. BTW-do not try to compensate for the sweetness by adding more sugar to the cake-this will make the chips seem even less sweet. You can, however, reduce the sugar in the cake by 1/4 cup which will make the difference not so noticeable.

I’m trying to make chocolate truffles with creme inside you know like, raspberry, strawberry…etc. So I can’t find oil-based flavoring anywhere but I can find extract. So can I use Extract?

You can, they just won’t taste as good. Extracts have a higher alcohol content (and not the good kind of alcohol) and taste less like natural flavor.
